Recently I gave birth to my daughter Collette (June 11, 2016). Being now a mom of 2 kids under 2 I realized quickly that my time to eat, let alone cook, was being cut short. So like any parent nowadays, I went to Pinterest to help me find a recipe that did not require any baking, but was still healthy, and I found these no bake energy bites. Well after making them up (barely took any time), I thought I should share the recipe with the Kneaded Relief Family.
As a side note, my husband and my son (22 months), loved them…
No Bake Energy Bites (just throw it all into a bowl and mix with hands. Then, form into balls a little smaller than the size of a golf ball.)
1 cup Old Fashioned Oats
1/3 cup Raw Honey
1/2 cup Peanut Butter (Smooth)
1/2 cup Semisweet Chocolate Chips
1 tsp Vanilla Extract
1 Tbsp Chia Seeds
2/3 cup shredded coconut (toast it in the microwave for additional flavor)
1/2 cup ground flax seed
Depending upon the size of the bites that you make, you should get at least 12-15 bites from this recipe.
